Add garlic and tomatoes. Simmer for\u00a090 minutes\u00a0until thick. This needs to be sturdy enough to hold its shape when cold.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">The Cheese Sauce<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Topping: 2kg\u00a0Ricotta +\u00a04\u00a0Eggs +\u00a01 tsp Chef Approved Parsley +\u00a0200g\u00a0Grated Parmesan. Salt and pepper.<\/li>\n\n\n\n<li>2kg\u00a0Grated Chef Approved Mozzarella (for the layers).<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">The Bright Red &#8220;Pour-Over&#8221; Sauce<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Tin (2.55kg)\u00a0Chef Approved Chopped Tomatoes<\/li>\n\n\n\n<li>150ml\u00a0Chef Approved Extra Virgin Olive Oil<\/li>\n\n\n\n<li>10 cloves\u00a0Garlic (sliced thin)<\/li>\n\n\n\n<li>1 bunch\u00a0Fresh Basil<\/li>\n\n\n\n<li>Salt &amp; Pepper<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:\u00a0<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Saut\u00e9 sliced garlic in oil until fragrant. Add tomatoes and whole basil stalks. Simmer for only\u00a020 minutes. Keep this sauce bright, thin, and vibrant red. Remove basil stalks before serving.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">4. Service<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>Build the layers and bake the lasagna at 180C for 60-75 mins.
