{"id":25109,"date":"2024-09-30T13:06:53","date_gmt":"2024-09-30T12:06:53","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=25109"},"modified":"2024-12-17T15:36:34","modified_gmt":"2024-12-17T15:36:34","slug":"christmas-salmon-platter","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/christmas-salmon-platter\/","title":{"rendered":"Christmas Salmon Platter"},"content":{"rendered":"\n<p>Serves 4<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Glazed Salmon<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 CHEF Approved salmon fillets&nbsp;<\/li>\n\n\n\n<li>2 tbsp Dijon mustard<\/li>\n\n\n\n<li>\u00bd tsp four pepper mix<\/li>\n\n\n\n<li>1 tsp garlic powder<\/li>\n\n\n\n<li>1 tsp CHEF Approved sea salt<\/li>\n\n\n\n<li>1\/2 tsp&nbsp; CHEF Approved black pepper<\/li>\n\n\n\n<li>2 tbsp honey<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">For the Platter<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>100g pea shoots<\/li>\n\n\n\n<li>200g CHEF Approved pickled red cabbage<\/li>\n\n\n\n<li>4&nbsp; CHEF Approved gherkins, chopped<\/li>\n\n\n\n<li>1 small orange, cut into slices<\/li>\n\n\n\n<li>30g pomegranate seeds<\/li>\n\n\n\n<li>Small handful of watercress leaves for garnish<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a bowl, mix the Dijon mustard, four pepper mix, garlic powder, sea salt, black pepper, and honey until well combined.<\/li>\n\n\n\n<li>Preheat the oven to 200\u00b0C (fan oven 180\u00b0C). Place the salmon fillets on a baking tray lined with parchment paper and brush the glaze generously over the top of each fillet.<\/li>\n\n\n\n<li>Bake the glazed salmon in the preheated oven for 12-14 minutes, basting every few mins with the glaze.<\/li>\n\n\n\n<li>While the salmon is baking, arrange the pea shoots, pickled red cabbage, and chopped gherkins on a large serving platter.&nbsp;<\/li>\n\n\n\n<li>Using a kitchen blow torch, lightly brown the orange slices until caramelised and fragrant. This adds a lovely visual element to the platter.<\/li>\n\n\n\n<li>Once the salmon is cooked, place the glazed salmon fillets on top of the arranged pea shoots and cabbage.&nbsp;<\/li>\n\n\n\n<li>&nbsp;Scatter pomegranate seeds and small watercress leaves over the salmon for decoration.
