Serve with creamy mustard mash and seasonal veggies for a show-stopping dish that is memorable in all the best ways.&nbsp;<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Venison Pie&nbsp;<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2\u00bd tbsp sunflower oil<\/li>\n\n\n\n<li>1kg diced venison<\/li>\n\n\n\n<li>100g smoked bacon lardons, pancetta, or chopped smoked streaky bacon<\/li>\n\n\n\n<li>2 onions, roughly chopped<\/li>\n\n\n\n<li>2 bay leaves<\/li>\n\n\n\n<li>200g chestnut mushrooms<\/li>\n\n\n\n<li>3 tbsp plain flour<\/li>\n\n\n\n<li>1 tbsp ketchup<\/li>\n\n\n\n<li>150ml red wine or dark ale<\/li>\n\n\n\n<li>750g&nbsp;Essential Cuisine Signature veal stock reduction<\/li>\n\n\n\n<li>20g&nbsp;Essential Cuisine game glace&nbsp;<\/li>\n\n\n\n<li>4&nbsp;&nbsp;Pidy wholemeal pastry cases, 11cm<\/li>\n\n\n\n<li>150g thinly sliced potatoes&nbsp;<\/li>\n\n\n\n<li>50g salted butter<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat the oven to 160\u00b0C\/140\u00b0C fan\/gas 3. Heat half the oil in a large flameproof casserole dish. Brown the venison well in batches for 10 mins over high heat, then set aside.<\/li>\n\n\n\n<li>Scatter the bacon into the pan with another \u00bd tbsp oil and sizzle for 8-10 mins until golden.<\/li>\n\n\n\n<li>Stir through the onions and bay leaves, drizzling with the remaining oil, and cook over low heat for 5 minutes until browned.<\/li>\n\n\n\n<li>Lower the heat to medium, then add the mushrooms and cook for a few minutes more until softened.<\/li>\n\n\n\n<li>Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup, Essential Cuisine Signature veal stock reduction and Essential Cuisine game glace and give it all a good stir. Pour over the wine or ale and bring to the boil. Bubble for a few minutes.<\/li>\n\n\n\n<li>Cover with a lid and put in the oven for about 2 hrs until the meat is tender. Leave to cool completely.<\/li>\n\n\n\n<li>To make the potato topping, brush the potatoes with butter, season and place in the oven until tender and browning on the edges.&nbsp;<\/li>\n\n\n\n<li>To make the pie, drop the heat of the oven to 150\u00b0C.<\/li>\n\n\n\n<li>Spoon the venison filling into the&nbsp;Pidy wholemeal pastry cases.<\/li>\n\n\n\n<li>Crumble some blue cheese onto the top of the filling.<\/li>\n\n\n\n<li>Place the potatoes on top of the filling and place in the oven for about 20 minutes until golden brown.<\/li>\n\n\n\n<li>Serve while hot.<\/li>\n<\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Chocolate and blackcurrant sauce&nbsp;<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tbsp oil<\/li>\n\n\n\n<li>500g&nbsp;Essential Cuisine Signature red wine jus<\/li>\n\n\n\n<li>10g&nbsp;deZaan carbon black cocoa powder<\/li>\n\n\n\n<li>25g&nbsp;Grandes Distilleries Peureux blackcurrants in blackcurrant creme de cassis<\/li>\n\n\n\n<li>20g Salted butter<\/li>\n\n\n\n<li>Salt and freshly ground pepper<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Method&nbsp;<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Reduce the Essential Cuisine red wine jus&nbsp;by half, and add the deZaan carbon black cocoa powder and 20g of salted butter.<\/li>\n\n\n\n<li>Add the Grandes Distilleries Peureux blackcurrants, season to taste and serve.&nbsp;<\/li>\n<\/ol>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Assembly&nbsp;<\/h3>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Spread the hot mash on the plate and place the vegetables before adding the finished pie to the plate.
