Take the skin off the poached smoked haddock, flake into large chunks and check for bones.<\/p>\n\n\n\n<p>2. Mix together the&nbsp;<a href=\"https:\/\/www.macphie.com\/products\/bechamel-with-butter-sauce\" target=\"_blank\" rel=\"noreferrer noopener\">Macphie B\u00e9chamel with Butter Sauce<\/a>&nbsp;and&nbsp;<a href=\"https:\/\/www.macphie.com\/products\/hollandaise-sauce\" target=\"_blank\" rel=\"noreferrer noopener\">Macphie Hollandaise Sauce<\/a>&nbsp;in equal parts.<\/p>\n\n\n\n<p>3. Heat a saute pan over a medium heat and add a small amount of butter until it melts.<\/p>\n\n\n\n<p>4. In a separate bowl, beat the eggs together with a spatula and season.<\/p>\n\n\n\n<p>5. Pour into the pan and gently cook over a medium heat until almost cooked.<\/p>\n\n\n\n<p>6. Remove from the heat and spread the egg evenly if needed.<\/p>\n\n\n\n<p>7. Add the smoked haddock and king prawns and cover generously with the sauce. Top with grated gruyere cheese and gratinate under the salamander.<\/p>\n\n\n\n<p>8.
