{"id":23171,"date":"2024-02-27T12:20:17","date_gmt":"2024-02-27T12:20:17","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=23171"},"modified":"2024-03-05T15:04:23","modified_gmt":"2024-03-05T15:04:23","slug":"ambrosia-orange-and-almond-cake-with-a-cardamom-custard","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/ambrosia-orange-and-almond-cake-with-a-cardamom-custard\/","title":{"rendered":"Ambrosia Orange and Almond Cake with a Cardamom Custard"},"content":{"rendered":"\n<p>Prep: 15 minutes<br>Cook: 30 minutes<br>Serves: 10<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>220g ground almonds<\/li>\n\n\n\n<li>65g gluten-free breadcrumbs (*check for allergens)<\/li>\n\n\n\n<li>1\/4 tsp baking powder<\/li>\n\n\n\n<li>2 oranges, zested and segmented<\/li>\n\n\n\n<li>150g caster sugar<\/li>\n\n\n\n<li>4 eggs<\/li>\n\n\n\n<li>60ml vegetable oil<\/li>\n\n\n\n<li>icing sugar, to dust<\/li>\n\n\n\n<li>For the cardamom custard<\/li>\n\n\n\n<li>1l Ambrosia Light Custard<\/li>\n\n\n\n<li>6 cardamom pods, husks removed, and the seeds ground to a powder<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 180\u00b0C, 350\u00b0F gas mark 4. Lightly grease a 22cm round cake tin and line the base and side with baking paper.<\/li>\n\n\n\n<li>Place the ground almond, gluten-free breadcrumbs, baking powder and orange zest in a bowl and stir to combine.<\/li>\n\n\n\n<li>Place caster sugar and eggs in a large bowl, and whisk until thick and pale. Gradually add the oil, while continuing to whisk, until well combined.<\/li>\n\n\n\n<li>Gently fold the dry ingredients into the egg mixture using a large metal spoon. Pour the mixture into a prepared cake tin and bake for 30 minutes or until a skewer inserted in centre of the cake comes out clean. Leave to cool in the tin.<\/li>\n\n\n\n<li>To make the custard, heat the custard in a saucepan with the ground cardamom over a medium heat until it comes to the boil. Strain through a fine sieve into a bowl to remove the cardamom pods.<\/li>\n\n\n\n<li>Remove the cake from the cake tin. Dust all over with icing sugar, top with the orange segments, and serve with the warm cardamom custard.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Tips<\/h2>\n\n\n\n<p>This is a great gluten-free option.
