{"id":19990,"date":"2023-08-30T14:10:47","date_gmt":"2023-08-30T13:10:47","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=19990"},"modified":"2024-01-18T12:21:23","modified_gmt":"2024-01-18T12:21:23","slug":"roasted-beetroot-risotto","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/roasted-beetroot-risotto\/","title":{"rendered":"ROASTED BEETROOT RISOTTO"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"font-size:16px\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<iframe width=\"400\" height=\"472\" src=\"https:\/\/www.youtube.com\/embed\/cavRORtkHZE\" title=\"Beetroot Risotto\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">serves 4<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 finely diced shallots<\/li>\n\n\n\n<li>2 tbs olive oil<\/li>\n\n\n\n<li>\u00bd litre vegetable bouillon paste<\/li>\n\n\n\n<li>\u00bd litre beetroot juice<\/li>\n\n\n\n<li>200grams cooked beetroot<\/li>\n\n\n\n<li>250grams (carnaroli) risotto rice<\/li>\n\n\n\n<li>Good pinch picked thyme leaves<\/li>\n\n\n\n<li>8 tbsp grated parmesan<\/li>\n\n\n\n<li>25g butter<\/li>\n\n\n\n<li>4 tbsp cream<\/li>\n\n\n\n<li>Salt &amp; pepper for seasoning<\/li>\n\n\n\n<li>70grams crumbly goats and a few fresh coriander leaves cheese to serve<\/li>\n<\/ul>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Firstly, cut the beetroot in to a rough 2cm approx dice and pan fry in hot oil for 2 minutes, season and then keep warm.<\/li>\n\n\n\n<li>Sweat off the shallots in olive oil.
