{"id":17114,"date":"2022-04-28T14:42:56","date_gmt":"2022-04-28T13:42:56","guid":{"rendered":"https:\/\/www.fairwayfoodservice.com\/?p=11199"},"modified":"2023-07-05T13:43:30","modified_gmt":"2023-07-05T12:43:30","slug":"gf-chocolate-cardamom-hazelnut-torte","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/gf-chocolate-cardamom-hazelnut-torte\/","title":{"rendered":"GF Chocolate Cardamom &amp; Hazelnut Torte"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients &#8211; Serves 8<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li>150g gluten-free dark chocolate<\/li><li>125g butter<\/li><li>6 eggs &#8211; separated<\/li><li>125g golden caster sugar<\/li><li>150g blanched hazelnuts<\/li><li>8 green cardamom pods<\/li><li>1 tbsp cocoa powder, plus extra for dusting<\/li><li>Cr\u00e8me fra\u00eeche, ice cream or extra thick cream to serve<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p><\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Toast the hazelnuts in a dry pan until golden, then leave to cool slightly and blitz to a fine consistency in a food processor.<\/li><li>Remove the cardamom seeds from their pods and grind using a pestle and mortar.<\/li><li>Heat oven to 160C (140 if fan oven) and grease and line the base of a 23cm spring-form cake tin.<\/li><li>Use a microwave to melt the chocolate with the butter in 30-sec bursts until glossy and smooth or melt over a bain marie &#8211; leave to cool slightly.<\/li><li>Using an electric whisk, whisk the egg whites until they reach stiff peaks. Then whisk the yolks with the sugar in a separate bowl, until pale.<\/li><li>Combine the chocolate with the egg yolk mixture, then incorporate the cocoa powder, a pinch of salt, the cardamom seeds and hazelnuts.<\/li><li>Add a spoonful of egg white to the batter, stirring it through to loosen the mix, then fold in the rest, taking care to keep in as much air as possible.<\/li><li>Gently pour into the tin and bake for 35 mins.<\/li><li>Leave to cool in the tin, then dust with cocoa powder and serve with cr\u00e8me fra\u00eeche, berries and a sprig of fresh mint.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>As a business that supplies food and drink to the public, it\u2019s incredibly important to offer gluten-free options on your menu, as well as a full allergen card of the menu.
