{"id":15588,"date":"2023-03-31T12:24:09","date_gmt":"2023-03-31T11:24:09","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=15588"},"modified":"2023-09-07T19:02:00","modified_gmt":"2023-09-07T18:02:00","slug":"rack-of-lamb-with-salsa-verde","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/rack-of-lamb-with-salsa-verde\/","title":{"rendered":"Rack of Lamb with Salsa Verde"},"content":{"rendered":"\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Serves 4<\/h2>\n\n\n\n<div style=\"height:19px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ul class=\"wp-block-list\"><li>2 x 6-bone racks of lamb, trimmed<\/li><li>1 tbsp olive oil<\/li><li>Fresh rosemary and four garlic cloves in skins<\/li><li>Butter for cooking<\/li><\/ul>\n\n\n\n<p>For the salsa verde&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 small handfuls of fresh mint leaves<\/li><li>2 large handfuls of fresh parsley leaves<\/li><li>2 tbsp capers, rinsed<\/li><li>8 anchovy fillets, rinsed<\/li><li>100ml olive oil<\/li><li>2-4 tbsp lemon juice<\/li><\/ul>\n\n\n\n<div style=\"height:21px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 220\u00b0C<\/li><li>Remove the skin from the lamb if it is still attached, then score the fat in a criss-cross pattern, trying not to cut into the meat.&nbsp;<\/li><li>Take a large frying pan, big enough to fit one rack of lamb, and put on medium to high heat, add the butter, rosemary and garlic cloves &#8211; smashed with the back of a knife. Add oil if needed to stop butter burning.<\/li><li>Once hot, add the racks, one at a time, and sear the meat, rendering down the fat on all sides &#8211; remove and place in a roasting tray.<\/li><li>Season well, spoon over some of the meat and butter juices, and add the garlic and rosemary into the roasting tray, then cook in the oven for 22-28 minutes, depending on how pink you like it to be.<\/li><li>Meanwhile, to make the sauce, put the mint, parsley, capers, anchovies, olive oil and 1 tbsp lemon juice in a food processor. Whizz for 1 minute, then taste and add more salt, pepper or lemon juice to taste if needed.<\/li><li>Once the lamb is cooked to your liking, remove from the oven, cover it with foil and rest for 10 minutes.&nbsp;<\/li><li>Cut the chops and serve three per person.
