{"id":14971,"date":"2023-01-25T14:43:29","date_gmt":"2023-01-25T14:43:29","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14971"},"modified":"2024-03-12T08:49:19","modified_gmt":"2024-03-12T08:49:19","slug":"coq-au-vin","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/coq-au-vin\/","title":{"rendered":"Coq Au Vin"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS: SERVES 4<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>8 pieces bone-in, skin-on chicken thighs<\/li>\n\n\n\n<li>2tbsp <a href=\"https:\/\/insider.fairwayfoodservice.com\/own-brand\/cooking-condiments\/oil\/rapeseed-oil-bib\/\">CHEF Approved rapeseed oil<\/a><\/li>\n\n\n\n<li>100 grams bacon, cut into 4cm pieces<\/li>\n\n\n\n<li><a href=\"https:\/\/insider.fairwayfoodservice.com\/own-brand\/cooking-condiments\/salt-pepper\/table-salt\/\">CHEF Approved Salt <\/a>and pepper<\/li>\n\n\n\n<li>2 pinches <a href=\"https:\/\/insider.fairwayfoodservice.com\/own-brand\/cooking-condiments\/herbs-spices\/garlic-powder\/\">CHEF Approved garlic powder<\/a><\/li>\n\n\n\n<li>2 large shallots, quartered<\/li>\n\n\n\n<li><strong>1<\/strong> bouquet garnie<\/li>\n\n\n\n<li>1 tbsp&nbsp;<a href=\"https:\/\/insider.fairwayfoodservice.com\/own-brand\/cooking-condiments\/tinned-tomatoes\/tomato-paste\/\">CHEF Approved tomato paste<\/a><\/li>\n\n\n\n<li>125 grams chicken bouillon<\/li>\n\n\n\n<li><strong>\u00bd <\/strong>bottle red wine &nbsp;<\/li>\n\n\n\n<li>2 med carrots, peeled and cut into 4cm pieces,<\/li>\n\n\n\n<li>3 tbsp  <a href=\"https:\/\/insider.fairwayfoodservice.com\/own-brand\/cooking-condiments\/butter-spreads\/buttery-spread\/\">CHEF Approved butter<\/a> ( 1tbsp is for the rice)<\/li>\n\n\n\n<li>1 tbsp flour<\/li>\n\n\n\n<li>250 grams baby chestnut mushrooms, whole or halved as desired<\/li>\n\n\n\n<li>200 grams rice<\/li>\n\n\n\n<li>Fresh parsley for garnish<\/li>\n<\/ul>\n\n\n\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHOD<\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Preheat the oven to 350\u00b0f.<\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\">\n<li>In an oven proof dish heat the rapeseed oil until hot, add the bacon and cook over medium heat for 8 to 10 minutes, until crispy. Remove the bacon to a kitchen paper, keep a little of the bacon fat in the pan.<\/li>\n\n\n\n<li>Season chicken generously with salt and pepper. Over medium heat, brown chicken in reserved bacon fat, working with only 2-3 pieces at a time, about 5 minutes. Set chicken aside.<\/li>\n\n\n\n<li>In the same pan add, shallots, and soften for a few minutes, add the wine and chicken stock, bring to the boil, and add the chicken, carrots, bouquet garnie, garlic powder, tomato paste and cooked bacon. Add mushrooms, stir and allow to simmer for about 1 minute.<\/li>\n\n\n\n<li>&nbsp;cover the pot with a tightfitting lid and place in the oven. Braise for 30 minutes.<\/li>\n\n\n\n<li>Remove from the oven and place back on top of the stove.<\/li>\n\n\n\n<li>In a small bowl mix together melted butter with flour and stir in \u00bc cup liquid from braising pan. Pour mixture back into the pan. Stir and cover. Cook for 10 minutes longer over medium heat.
