{"id":14772,"date":"2022-11-30T13:13:27","date_gmt":"2022-11-30T13:13:27","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14772"},"modified":"2023-09-07T16:07:03","modified_gmt":"2023-09-07T15:07:03","slug":"mafe-senegal","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/mafe-senegal\/","title":{"rendered":"Maf\u00e9 (Senegal)"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1\/2 cup peanut of butter<\/li><li>2 tablespoons canola oil<\/li><li>2 cups stock<\/li><li>1 cup chopped onion<\/li><li>4 garlic cloves &#8211; minced<\/li><li>2 lbs stew meat &#8211; trimmed and cut into 1 and 1\u20442 inch cubes<\/li><li>salt and pepper<\/li><li>2 cups tomatoes &#8211; peeled and diced <\/li><li>1 sprig thyme<\/li><li>1 bay leaf<\/li><li>1 cup carrots &#8211; peeled and chopped<\/li><li>1 cup green bell pepper &#8211; peeled, seeded and chopped<\/li><li>1 cayenne pepper &#8211; seeded and chopped<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHODS<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Mix and whisk together peanut butter and stock and reserve.<\/li><li>Season the meat with salt and pepper.<\/li><li>Heat the oil in a large saucepan over medium heat.<\/li><li>Brown the meat well on all sides; do not crowd the meat; saut\u00e9 in batches if necessary.<\/li><li>Remove the meat and keep it warm.<\/li><li>Add the onion, garlic, peppers, and carrots to the saucepan and saut\u00e9 until the onions are translucent.<\/li><li>Add the peanut butter and stock mixture.<\/li><li>Return the reserved meat (and juices) to the saucepan. Add tomatoes and their liquid, the thyme and bay leaf.<\/li><li>Stir it well and bring to a boil. Reduce the heat to low and let simmer, stirring often &#8211; for about 1 hour or until the meat is tender.<\/li><li>Taste it for seasoning.<\/li><li>Remove the thyme sprig and the bay leaf.<\/li><li>Serve the dish hot over rice.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Maf\u00e9, an authentic, spicy Senegalese stew.
