{"id":14763,"date":"2022-11-25T11:21:20","date_gmt":"2022-11-25T11:21:20","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14763"},"modified":"2023-07-11T21:17:10","modified_gmt":"2023-07-11T20:17:10","slug":"beef-chorizo-empanadas-argentina","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/beef-chorizo-empanadas-argentina\/","title":{"rendered":"Beef &#038; Chorizo Empanadas (Argentina)"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Makes 16<\/h2>\n\n\n\n<p><strong>The pastry<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>375g plain flour<\/li><li>220g chilled butter, chopped into cubes<\/li><li>2 eggs, beaten<\/li><\/ul>\n\n\n\n<p><strong>The filling<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>100g cooking chorizo sausage<\/li><li>300g beef mince<\/li><li>1 onion, chopped<\/li><li>Large handful of coriander, chopped<\/li><li>Large handful of parsley, chopped<\/li><li>2 tsp smoked paprika<\/li><li>2 tsp ground cumin<\/li><li>1 tsp chilli flakes<\/li><li>2 tbsp tomato pur\u00e9e<\/li><\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Tip the flour into a bowl with 1 tsp salt and add the butter.<\/li><li>Rub the butter and flour with your fingertips until crumbly.<\/li><li>Add the eggs and 100ml cold water, bring together to a dough then turn out onto a floured surface and begin to knead until soft and smooth.<\/li><li>Cover with cling film and put in the fridge to rest for 20 minutes.<\/li><li>Remove the chorizo from its casing and add to a mixing bowl with the mince, onion, coriander, parsley, paprika, cumin and chilli flakes.<\/li><li>Combine together, then cook in a frying pan over a medium heat for 2 minutes.<\/li><li>Add the tomato pur\u00e9e and cook for a further 7-10 mins until everything is cooked through &#8211; remove from the heat and allow to cool.<\/li><li>Preheat the oven to 180\u00b0C, then divide the dough into four portions and roll out each one into a thin sheet.<\/li><li>Use a 10cm biscuit cutter to cut out discs.<\/li><li>Place 1 tsp of filling in the centre of each disc, wet the edges, pinch both sides up and fold in half to seal. Use a fork to crimp the edges.<\/li><li>Place on a lined baking tray, brush with beaten egg and bake for 20 mins.<\/li><li>When the empanadas are ready, remove from the oven and cool for 5 mins before serving.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>The Fifa World Cup 2022 is almost upon us, and soon, pubs will be full with hopefully Brits, hungry for more than just football.
