{"id":14762,"date":"2022-11-25T11:21:17","date_gmt":"2022-11-25T11:21:17","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14762"},"modified":"2023-07-02T06:16:48","modified_gmt":"2023-07-02T05:16:48","slug":"machboos-qatar","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/machboos-qatar\/","title":{"rendered":"Machboos (Qatar)"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Serves 4<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 large onions, diced<\/li><li>3 tablespoons ghee or unsalted butter<\/li><li>1 tablespoon baharat (if you can\u2019t get this combine: 1 tablespoon black peppercorns with 1 tablespoon cumin seeds, 2 tsp coriander seeds, 1 cinnamon stick (about 2 inches long), 1 tsp whole cloves, \u00bc tsp green cardamom seeds &#8211; roasted. Once cooled, add 1 tbsp paprika powder and \u00bc tsp ground nutmeg, then grind)<\/li><li>1 tsp turmeric<\/li><li>2 tbsp oil<\/li><li>A combination of chicken thighs, legs and breasts (about 3lbs)<\/li><li>1 hot green chilli pepper, de-seeded and diced<\/li><li>1 tbsp fresh ginger, minced<\/li><li>5 large garlic cloves, thinly sliced<\/li><li>2 large tomatoes, diced or a 400g can of diced tomatoes, juices drained<\/li><li>2-3 dried limes, several holes punched throughout each one<\/li><li>5 green cardamom pods<\/li><li>\u215b tsp ground cloves<\/li><li>1 stick cinnamon (about 2 inches long)<\/li><li>2\u00bd tsp salt<\/li><li>600ml chicken stock<\/li><li>400g basmati rice (soaked for at least 15 minutes, then rinsed and drained)<\/li><li>3 tbsp fresh coriander, chopped<\/li><li>2 tbsp fresh parsley, chopped<\/li><li>Rosewater for sprinkling (optional, but recommended)<\/li><\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Heat the oil in a large Dutch oven, over medium-high heat, and fry the chicken pieces on both sides until the skin is brown and crispy.<\/li><li>Transfer the chicken to a plate and leave the remaining oil in the Dutch oven.<\/li><li>Add the ghee (or butter), reduce the heat to medium, and fry the onions for about 10 minutes.<\/li><li>Add the ginger, garlic, and green chile pepper and saute for another 2 minutes.<\/li><li>Add the baharat and turmeric and cook for another minute.<\/li><li>Return the chicken pieces to the Dutch oven along with the tomatoes, dried limes, cardamom pods, cinnamon, ground cloves and salt.<\/li><li>Add the chicken stock and stir to combine. Bring it to a boil, reduce the heat to low, cover and simmer for one hour.<\/li><li>Add the coriander, parsley and drained rice and stir to combine. Return to a boil, reduce the heat to low, cover, and simmer for another 15-20 minutes until the rice is cooked and has absorbed all the liquid.<\/li><li>Transfer the chicken and rice to a serving dish (either leave the chicken pieces tossed in with the rice, or place the chicken on top of the rice), and sprinkle with 1-2 tbsp of rosewater (if available).<\/li><li>Serve with raita.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>The Fifa World Cup 2022 is almost upon us, and soon, pubs will be full with hopefully Brits, hungry for more than just football.
