{"id":14684,"date":"2022-11-17T11:13:38","date_gmt":"2022-11-17T11:13:38","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14684"},"modified":"2023-07-02T06:19:27","modified_gmt":"2023-07-02T05:19:27","slug":"moqueca","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/moqueca\/","title":{"rendered":"Moqueca (Brazil)"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients: Serves 4<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>300g large, raw, peeled prawn<\/li><li>300g white fish, cut into 2cm chunks &#8211; like cod<\/li><li>75ml lime juice<\/li><li>3 garlic cloves, finely chopped<\/li><li>3 tbsp coconut oil<\/li><li>4 spring onions, chopped<\/li><li>1 onion, sliced into half moons<\/li><li>1 red pepper, thinly sliced<\/li><li>1 tsp chilli flakes<\/li><li>2 tsp paprika<\/li><li>3 plum tomatoes , deseeded and chopped<\/li><li>400ml coconut milk<\/li><li>To serve: rice and fresh coriander<\/li><\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Place the prawns in a bowl with 2 tbsp of the lime juice, 1 tsp of salt and 1 tbsp of the chopped garlic. Chill for 1 hr.<\/li><li>Heat the coconut oil in a large saucepan. Add the spring onion and onion and fry for 5 mins, then add the red pepper, chilli flakes, paprika and remaining garlic.<\/li><li>Pour in the tomatoes, coconut milk and a little salt. Bring to a simmer and let reduce for 10 mins. Add the fish, cook for 1-2 minutes, then add the prawns, all the marinade and remaining lime juice.<\/li><li>Gently simmer until the prawns are cooked &#8211; about 3 mins.<\/li><li>Serve with the fresh coriander and rice<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>The Fifa World Cup 2022 is almost upon us, and soon, pubs will be full with hopefully Brits, hungry for more than just football.
