{"id":14144,"date":"2022-09-29T10:17:03","date_gmt":"2022-09-29T09:17:03","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=14144"},"modified":"2023-07-11T21:16:31","modified_gmt":"2023-07-11T20:16:31","slug":"beetroot-burgers","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/beetroot-burgers\/","title":{"rendered":"Beetroot Burgers"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Makes 6 patties<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 raw beetroots, peeled and grated<\/li><li>3 tbsp olive oil<\/li><li>1 red onion, finely chopped<\/li><li>2 garlic cloves, crushed<\/li><li>1 courgette, grated<\/li><li>2 large carrots, peeled and grated<\/li><li>100g\/3\u00bd oz porridge oats \/ oat flour<\/li><li>400g tin of chickpeas, drained<\/li><li>3 tbsp tahini<\/li><li>1 large free-range egg yolk<\/li><li>4 spring onions, thinly sliced<\/li><li>3 tbsp finely chopped fresh coriander<\/li><li>Salt and pepper to season<\/li><\/ul>\n\n\n\n<p>Don\u2019t forget your Burger buns, tomato, a type of cheese (goats cheese \/ feta \/ cheddar), lettuce, and avocado too.<\/p>\n\n\n\n<p>Horseradish or wasabi mayo also works really well here!<\/p>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>To make the beetroot burger, heat 1 tablespoon of oil in a large frying pan, over a medium heat, then add the onion and garlic, and fry for 4\u20135 minutes, until soft.&nbsp;<\/li><li>Add the grated vegetables and cook for 5 minutes &#8211; stirring often. Drain away any excess liquid released by the vegetables.<\/li><li>Place the oats, chickpeas, tahini and egg yolk in a food processor and pulse to combine.&nbsp;<\/li><li>Tip the mixture into a bowl and stir in the grated vegetables, spring onions and coriander. Season generously with salt and pepper.<\/li><li>Divide the mixture into six and shape into burgers.
