{"id":13809,"date":"2022-09-16T08:15:27","date_gmt":"2022-09-16T07:15:27","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=13809"},"modified":"2023-07-02T18:01:05","modified_gmt":"2023-07-02T17:01:05","slug":"pumpkin-pie","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/pumpkin-pie\/","title":{"rendered":"Pumpkin Pie"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients: Serves 8-10&nbsp;<\/h2>\n\n\n\n<p>For the pastry<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>175 g plain flour<\/li><li>125 g butter, cold and cubed<\/li><li>40 g caster sugar<\/li><li>1 medium egg yolk<\/li><\/ul>\n\n\n\n<p>For the filling<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 medium eggs<\/li><li>100g caster sugar<\/li><li>1 tsp cinnamon<\/li><li>1\/2 tsp mixed spice<\/li><li>1\/2 tsp ginger<\/li><li>300g pumpkin puree (make this by roasting your pumpkin, scooping out the soft flesh then blending until smooth)<\/li><li>200 ml evaporated milk<\/li><\/ul>\n\n\n\n<p>Double cream, cr\u00e8me fra\u00eeche, or ice cream to serve<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>To make the pastry, place the flour and butter into a food processor and pulse until the mixture resembles fine breadcrumbs (alternatively, go traditional and rub the butter into the flour using your fingers).&nbsp;<\/li><li>Add the caster sugar and briefly bliz to combine<\/li><li>Next, add the egg yolk and 2 teaspoons of water and pulse until the pastry comes together.&nbsp;<\/li><li>Bring pastry together with your hands, wrap in clingfilm and then chill in the fridge for 30minutes.<\/li><li>Take the pastry from the fridge, lightly dust your work surface with flour and roll out the pastry to fit an 8in round, roughly 1\u00bdin deep cake tin.&nbsp;<\/li><li>Place in the tin, prick base with a fork and chill for 20minutes.<\/li><li>Preheat the oven to 200\u00b0C (180\u00b0C fan) then remove your tin from the fridge and line the pastry case with baking parchment.<\/li><li>Fill with ceramic baking beans or uncooked rice, then place on a baking tray and bake for 15min.&nbsp;<\/li><li>Carefully remove the parchment and beans, then return the tin to the oven and bake for a further 8 minutes &#8211; or until the pastry is cooked through but still light brown.<\/li><li>Meanwhile, in a large bowl, lightly beat the eggs until pale and fluffy.<\/li><li>Fold through the sugar, spices and pumpkin until combined.&nbsp;<\/li><li>Gently mix through the evaporated milk and pour into the cooked pastry.<\/li><li>Drop the oven temperature to 180\u00b0C (160\u00b0C fan), then return the tart to the oven and cook for 45-50min or until the filling is just cooked &#8211; firm but with a slightly wobble.<\/li><li>Serve just warm with your choice of topping.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>It may seem cliche, but you can\u2019t go wrong with a pumpkin pie, and it\u2019s not very often we see one on the menu!
