{"id":13798,"date":"2022-09-15T14:07:03","date_gmt":"2022-09-15T13:07:03","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=13798"},"modified":"2023-09-07T18:30:04","modified_gmt":"2023-09-07T17:30:04","slug":"pumpkin-ricotta-ravioli-with-sage-butter","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/pumpkin-ricotta-ravioli-with-sage-butter\/","title":{"rendered":"Pumpkin &amp; Ricotta Ravioli with Sage Butter"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Serves 2-4 (starter or main)<\/h2>\n\n\n\n<p>For the Pasta<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g of 00 flour<\/li><li>3 medium egg yolks<\/li><li>2 medium whole eggs<\/li><\/ul>\n\n\n\n<p>For the filling<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 large pumpkin, peeled and cut into wedges<\/li><li>2 dried chillies, crushed, or 1 scant teaspoon chilli flakes (optional)<\/li><li>Pinch of salt<\/li><li>6 tbsp olive oil<\/li><li>The zest of 1 lemon<\/li><li>250 g ricotta<\/li><li>80 g Parmesan, grated<\/li><li>1 x quantity pasta dough&nbsp;<\/li><li>Semolina, for dusting<\/li><\/ul>\n\n\n\n<p>For the sauce:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>150 g butter<\/li><li>8\u201310 sage leaves<\/li><li>40 g Parmesan, grated, plus extra to serve<\/li><\/ul>\n\n\n\n<div style=\"height:44px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 180\u00baC.<\/li><li>In a roasting tin, season the pumpkin well with a pinch of salt, chilli and olive oil then roast in the oven until soft and caramelised &#8211; about 40\u201350 minutes. Leave to cool completely. Meanwhile, make your pasta dough.<\/li><li>To make the pasta dough, mix the ingredients together, either by hand, with a spoon, or in a mixer.&nbsp;<\/li><li>Knead for at least 10 minutes, until you have a smooth, even dough.&nbsp;<\/li><li>Wrap in cling film and leave to rest for a good 30 minutes.<\/li><li>Mash the cooked pumpkin in a bowl with a fork and add the lemon zest, ricotta and Parmesan &#8211; taste for seasoning.&nbsp;<\/li><li>Set aside to cool completely, either at room temperature or in the fridge.<\/li><li>Cut the pasta dough in half, then, using a machine, roll the dough (adding flour when necessary) until it\u2019s thin enough to just see your hand through, then lay out one strip on a floured surface.&nbsp;<\/li><li>Take walnut-sized pieces of the filling and place in the centre of the pasta with 5 cm\/2 in spaces between each.<\/li><li>Dampen the pasta sheet with a pastry brush dipped in water and fold the top part of the sheet over the bottom, pressing down with your fingers to seal.&nbsp;<\/li><li>Cut the ravioli and place on a tray well coated in semolina.&nbsp;<\/li><li>Place in the fridge until service.<\/li><li>When you are ready to good your pasta, get a large pot of salted boiling water on the go, as well as a shallow pan to make he sauce.<\/li><li>Melt the butter over a medium heat, add the sage leaves and continue cooking it, letting it bubble away until it just begins to turn brown.<\/li><li>As you melt the butter for the sauce, drop the ravioli into the salted boiling water and cook for 2\u20133 minutes, until they come to the surface.<\/li><li>Once the butter for the sauce has begun to brown, add a ladle of the pasta cooking water and turn down the heat &#8211;
