{"id":13392,"date":"2022-08-24T10:36:53","date_gmt":"2022-08-24T09:36:53","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=13392"},"modified":"2023-12-14T13:30:54","modified_gmt":"2023-12-14T13:30:54","slug":"cauliflower-mac-n-cheese","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/cauliflower-mac-n-cheese\/","title":{"rendered":"Cauliflower Mac \u2018n\u2019 Cheese"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Serves 4<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 small cauliflower (roughly 500g-600g) &#8211; trimmed and cut into florets<\/li><li>265g macaroni pasta<\/li><li>28g butter<\/li><li>9g flour<\/li><li>250ml milk<\/li><li>1 tsp dijon mustard<\/li><li>145g cheese<\/li><li>25g panko breadcrumbs (or make your own breadcrumbs)<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 200c.<\/li><li>Remove the base and outer leaves from the cauliflower, then break into florets and wash &#8211; you could save the leaves and roast them with a little oil and salt and pepper for a crunchy side or topping!<\/li><li>Place the florets into a pan of boiling water and boil for roughly 8 minutes or until soft.<\/li><li>Drain the cauliflower and blend.<\/li><li>Cook the macaroni pasta in a saucepan of boiling water, as per pack instructions.<\/li><li>Meanwhile, make your sauce.<\/li><li>Add the butter to a saucepan, melt, then add the flour to form a roux, stir continuously for about 2 minute to cook out the flour.<\/li><li>Add milk &#8211; a little at a time &#8211; keep stirring or whisking continuously between each pour &#8211; stir out any lumps before adding more milk.&nbsp;<\/li><li>Continue adding the milk little by little until all the milk is incorporated and the sauce is thick and glossy.<\/li><li>Take off the heat and stir in the mustard and around \u2154 of the cheese (115g), reserving the rest for the top.<\/li><li>Add the cauliflower puree to the sauce and combine &#8211; if the sauce seems too thick, add a little more milk or touch of veg stock.<\/li><li>Add the sauce to the drained pasta and mix well.<\/li><li>Pour into a large baking dish and top with the remaining cheese and panko breadcrumbs.<\/li><li>Bake in the oven for around 20 minutes, until the top is crisp and golden.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients: Serves 4 1 small cauliflower (roughly 500g-600g) &#8211; trimmed and cut into florets 265g macaroni pasta 28g butter 9g flour 250ml milk 1 tsp dijon mustard 145g cheese 25g panko breadcrumbs (or make your own breadcrumbs) Method: Preheat the oven to 200c.
