{"id":12783,"date":"2022-07-26T07:24:48","date_gmt":"2022-07-26T06:24:48","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=12783"},"modified":"2023-09-07T16:07:44","modified_gmt":"2023-09-07T15:07:44","slug":"sweet-potato-shepherds-pie","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/sweet-potato-shepherds-pie\/","title":{"rendered":"Sweet Potato Shepherd\u2019s Pie"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients: Serves 6-8<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 tsp vegetable oil<\/li><li>1 large onion, chopped<\/li><li>250g cup mushrooms, chopped<\/li><li>100g peas<\/li><li>2 garlic cloves, crushed<\/li><li>1 x 500g lamb mince or beef mince&nbsp;<\/li><li>2 medium carrots, grated coarsely or chopped into small cubes<\/li><li>2 celery stalks, finely chopped<\/li><li>1 tbsp cornflour<\/li><li>2 tbsp tomato pur\u00e9e<\/li><li>4 sprigs thyme, leaves only<\/li><li>1 tbsp Worcestershire sauce&nbsp;<\/li><li>900g (roughly) of sweet potato, peeled and chopped<\/li><li>Parmesan for the top<\/li><li>50ml milk &#8211; use dairy-free alternative if required (coconut or soya milk)<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Heat the oil in a large, deep pan, over a medium heat.<\/li><li>Add the onion and fry for about 10 minutes, until soft.<\/li><li>Add the mushrooms and garlic and fry for another 5 minutes before adding the mince, carrot and celery.&nbsp;<\/li><li>Cook for 10 minutes until the vegetables are tender and the mince has browned.<\/li><li>Add the cornflour, tomato pur\u00e9e, thyme leaves, Worcestershire sauce and combine.<\/li><li>Then add 300ml water and simmer for 10 minutes with a lid &#8211; add a splash more water if you need to.&nbsp;<\/li><li>Heat the oven to 220\u00b0C, fan 200\u00b0C, gas 7 then bring a large pan of water to the boil and cook the sweet potato chunks until soft (10-15 mins)<\/li><li>Drain and leave them to steam dry for a minute, then mash well with the milk to make a smooth mash &#8211; season.<\/li><li>Stir the peas (frozen is fine) through the cooked mince mixture then add it all to an ovenproof dish.<\/li><li>Spoon the cooked mince mixture into an ovenproof dish, then spread the sweet potato mash over the top &#8211;
