{"id":12568,"date":"2022-06-15T09:38:47","date_gmt":"2022-06-15T08:38:47","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=12568"},"modified":"2023-07-02T17:55:08","modified_gmt":"2023-07-02T16:55:08","slug":"roasted-aubergine-bulger-mint-salad","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/roasted-aubergine-bulger-mint-salad\/","title":{"rendered":"Roasted Aubergine, Bulger &#038; Mint Salad"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<h2 class=\"wp-block-heading\">Serves 4<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>4 aubergines, cut into small chunks<\/li><li>1-2 tbsp oil<\/li><li>1 tsp cumin seeds<\/li><li>Handful of fresh mint<\/li><li>200 quick cooking bulgur wheat<\/li><li>2 tbsp toasted pine nuts<\/li><li>Dressing:<\/li><li>100g greek yoghurt<\/li><li>1 garlic clove, minded<\/li><li>2 tbsp tahini<\/li><li>1 tbsp fresh lemon juice<\/li><li>Pinch of sea salt and black pepper<\/li><li>1tbsp olive oil<\/li><\/ul>\n\n\n\n<p>Optional: Pickled red onion<\/p>\n\n\n\n<p>Add a few tbsp of apple cider vinegar or white wine vinegar to 1 finely sliced red onion, and leave to pickle for 30+ minutes &#8211; it will keep in the fridge for days.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 200\u00baC.<\/li><li>If making the red onion pickle, do so now.<\/li><li>Toss your diced aubergine with cumin seeds, oil, and salt and pepper, then place on a baking tray and roast for 30 minutes.<\/li><li>Meanwhile, cook your bulgar wheat in lightly salted water &#8211; following the instructions on the packet.<\/li><li>While they both cook, make your tahini dressing by combining the ingredients together. Set aside.<\/li><li>When the bulgar wheat and aubergine are ready combine together in a bowl, with a drizzle of olive oil, and freshly chopped mint.&nbsp;<\/li><li>Drizzle over your dressing and top with toasted pine nuts, and your pickled onions.<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Days are becoming longer, mornings brighter, and there\u2019s a warmth in the air that can only mean summer is on the way.
