{"id":11526,"date":"2021-12-03T13:05:04","date_gmt":"2021-12-03T13:05:04","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?post_type=recipe&#038;p=11526"},"modified":"2023-07-02T06:27:42","modified_gmt":"2023-07-02T05:27:42","slug":"turkey-feta-meatballs","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/turkey-feta-meatballs\/","title":{"rendered":"Turkey &#038; Feta Meatballs"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p><strong>The tomato sauce<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 tbsp olive oil<\/li><li>2 tins of chopped tomatoes<\/li><li>200ml of red wine<\/li><li>4 garlic cloves<\/li><li>1 tsp of dried basil<\/li><li>1 big handful of fresh basil&nbsp;<\/li><li>1 onion, chopped<\/li><li>1 tbsp of tomato puree<\/li><li>1\/2 tsp of sugar \/ honey<\/li><li>Toasted pine nuts to serve<\/li><\/ul>\n\n\n\n<p><strong>The meatballs<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 lb of turkey mince<\/li><li>1 tsp of cumin seeds<\/li><li>100g feta (leave this out if you want them dairy free)<\/li><li>2 garlic cloves<\/li><li>1 egg<\/li><li>35g of panko bread crumbs<\/li><li>Salt and pepper to taste<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<p><strong>The tomato sauce<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Finely chop the garlic and onion and add to a deep saucepan or frying pan with the olive oil and cook on a low heat until translucent<\/li><li>Once the garlic and onion are cooked through, add in your tomato puree and dried basil and fry for a further minute<\/li><li>Now add in your red wine and continue to cook down for 2 minutes or until reduced, then add in your chopped tomatoes<\/li><li>Season your sauce with salt, pepper and add in sugar to taste<\/li><li>Leave this to simmer on a low heat and reduce while you make your meatballs, stirring occasionally \u2013 you may need to add a little water during this process if it gets too thick<\/li><\/ol>\n\n\n\n<p>I prefer a smoother sauce so I like to blend mine before serving.<\/p>\n\n\n\n<p><strong>The meatballs<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 180 degrees celsius&nbsp;<\/li><li>Line a large baking tray with bake proof paper and set aside<\/li><li>In a large bowl, combine the turkey mince with the cumin seeds, crumbled feta and finely chopped garlic, followed by the breadcrumbs<\/li><li>Whisk the egg in a separate bowl and then add to the turkey mince, and combine until it starts to thicken and gloop together<\/li><li>Roll the mixture into 15-20 even balls and place on the baking tray with small even spaces between them<\/li><li>Pop these into the oven for roughly 20-25 minutes until slightly golden brown and cooked through<\/li><li>Once cooked, remove from the oven and place into your sauce along with a handful of fresh basil leaves.<\/li><li>Allow to simmer together for a further 5-10 minutes, while you prepare your pasta\/courgetti and toast your pine nuts&nbsp;<\/li><li>If serving with courgetti, I like to lightly warm mine in a pan or blast in the microwave for 30 seconds \u2013 don\u2019t cook it or it will go wet and soggy. If using pasta, cook to instructions<\/li><li>Serve your meatballs with shaved parmesan, some toasted pine nuts and a few leaves of fresh basil<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>If you aren\u2019t sick of turkey yet, give this meatball recipe a go.
