{"id":11201,"date":"2022-04-28T14:44:50","date_gmt":"2022-04-28T13:44:50","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?p=11201"},"modified":"2023-09-07T16:27:40","modified_gmt":"2023-09-07T15:27:40","slug":"gf-orange-polenta-almond-cake","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/gf-orange-polenta-almond-cake\/","title":{"rendered":"GF Orange, Polenta &#038; Almond Cake"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<p><strong>Serves 10<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>175g of butter, softened and cubed, plus extra for greasing<\/li><li>175g of caster sugar<\/li><li>3 medium free-range eggs<\/li><li>200g ground almonds<\/li><li>100g fine polenta<\/li><li>50g greek-style yoghurt<\/li><li>1 heaped tsp of gluten free baking powder<\/li><li>4 green cardamom pods, seeds only, lightly crushed<\/li><li>1 tsp fennel seeds<\/li><li>1 lemon, finely grated zest only<\/li><li>1 medium orange, finely grated zest and juice only (around 40ml) + 1 orange for decoration \u2013 if you can get your hands on a blood orange, use this&nbsp;<\/li><li>20g flaked almonds<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHOD<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Preheat the oven to 180C.<\/li><li>Butter and line a 900g loaf tin with baking paper (or the baking tray).<\/li><li>Put the butter and sugar in a mixer and whisk until very pale and creamy (alternatively use an electric whisk).&nbsp;<\/li><li>Add two of the eggs, one at a time, whisking well between each addition.&nbsp;<\/li><li>Add the final egg and half the almonds and whisk until well combined, light and fluffy.<\/li><li>Add the remaining ingredients, except the flaked almonds, and whisk until well combined.&nbsp;<\/li><li>Don\u2019t worry if the cake looks a&nbsp;<em>little<\/em>&nbsp;curdled, but add a couple of tablespoons of gluten free self-raising flour if the mixture is looking&nbsp;<em>very<\/em>&nbsp;curdled \u2013 this can happen if the ingredients are added too quickly.<\/li><li>Spoon the mixture into the prepared tin, sprinkle with flaked almonds and bake for 45\u201355 minutes, or until risen and golden brown.&nbsp;<\/li><li>Test that the cake is ready by inserting a skewer into the middle \u2013 if it comes out clean it is done.<\/li><li>Leave to cool for 10 minutes, then loosen gently with a knife before removing from the tin, taking care as it will be hot.
