{"id":11188,"date":"2022-04-28T14:31:23","date_gmt":"2022-04-28T13:31:23","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?p=11188"},"modified":"2023-07-02T06:21:53","modified_gmt":"2023-07-02T05:21:53","slug":"guinness-chocolate-pudding-2","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/guinness-chocolate-pudding-2\/","title":{"rendered":"Guinness Chocolate Pudding"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<p><strong>Serves 4<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>200g dark chocolate (at least 70% cocoa), roughly chopped<\/li><li>150g unsalted butter, plus extra for the ramekins<\/li><li>90g golden caster sugar<\/li><li>3 large eggs<\/li><li>90ml Guinness or a similar stout<\/li><li>Clotted cream or thick double cream, to serve (optional)<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHOD<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Butter four 9 x 5cm ramekins and set aside.<\/li><li>In a heatproof bowl, add the butter, chocolate, and a generous pinch of salt.<\/li><li>Set over a small pan of simmering water and stir until melted, then remove from the heat and set aside to cool a little.<\/li><li>Place the sugar and eggs in a large mixing bowl, and beat with an electric whisk until pale. They should almost double in volume.<\/li><li>Gently fold in the melted chocolate and the Guinness.<\/li><li>Spoon the mixture into the ramekins, then chill in the fridge for 1 hr.<\/li><li>Heat oven to 200C\/180C fan\/gas 6 and put a baking tray on the top shelf to heat up.<\/li><li>Place the ramekins on the hot baking tray and bake for 18 minutes.<\/li><li>Remove from the oven and leave to stand for a minute.<\/li><li>Serve with a spoonful of cream \u2013 you could whisk in a little Irish Whiskey, if you like, as well as a sprig of fresh mint.
