{"id":11155,"date":"2022-04-28T13:50:06","date_gmt":"2022-04-28T12:50:06","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?p=11155"},"modified":"2023-09-07T16:28:21","modified_gmt":"2023-09-07T15:28:21","slug":"earl-grey-lemon-blueberry-cake","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/earl-grey-lemon-blueberry-cake\/","title":{"rendered":"Earl Grey, Lemon &#038; Blueberry Cake"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>120ml milk<\/li><li>3-4 bags of earl grey tea<\/li><li>120g salted butter, at room temperature<\/li><li>100g granulated sugar<\/li><li>2tsp lemon zest<\/li><li>2tsp orange zest<\/li><li>3 large eggs, at room temperature<\/li><li>2tsp vanilla extract<\/li><li>125g of self-raising flour<\/li><li>85g almond flour&nbsp;<\/li><li>2tsp baking powder<\/li><li>\u00bd tsp salt<\/li><li>220g fresh or frozen blueberries<\/li><li>1tbsp blueberry jam (optional)<\/li><\/ul>\n\n\n\n<p><strong>For the Lemon Glaze<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>80g caster sugar<\/li><li>3tbsp lemon juice<\/li><li>1 blood orange (optional)<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHOD<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Bring the milk to a simmer in a small saucepan. Remove from the heat, add the earl grey tea bags, cover, and leave to infuse for 10 minutes. Remove the tea bags and discard, preserving the milk.<\/li><li>Preheat the oven to 180 degrees and grease your baking tin \u2013 we recommend a 9\u00d75 inch loaf pan.<\/li><li>In a large mixing bowl, beat together the butter, sugar, lemon zest, and orange zest until combined.&nbsp;<\/li><li>Beat in the eggs, one at a time, until combined, then add the vanilla. Add your flour, almond flour, baking powder, and salt, and beat to combine. Add the earl grey-infused milk, beating until just combined.<\/li><li>Toss the blueberries with 1 tbsp flour, which will help stop them from sinking to the bottom. Then add \u00be of the blueberries to the mixture.&nbsp;<\/li><li>Spoon the batter into the prepared pan. Swirl in the blueberry jam (if using), then sprinkle on the remaining blueberries, and 1 tbsp sugar.&nbsp;<\/li><li>Bake for 55-60 minutes or until the centre is just set.&nbsp;<\/li><li>Remove from the oven and leave to cool before glazing.<\/li><li>While the cake cools, make the glaze.&nbsp;<\/li><li>Remove the zest from the blood orange with a vegetable peeler in wide strips.
