{"id":11150,"date":"2022-04-28T13:43:57","date_gmt":"2022-04-28T12:43:57","guid":{"rendered":"https:\/\/insider.fairwayfoodservice.com\/?p=11150"},"modified":"2023-09-07T16:30:17","modified_gmt":"2023-09-07T15:30:17","slug":"carrot-cake-2","status":"publish","type":"recipe","link":"https:\/\/insider.thewholesalegroup.co.uk\/recipe\/carrot-cake-2\/","title":{"rendered":"Carrot Cake"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">INGREDIENTS<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>155ml sunflower oil, plus extra for greasing<\/li><li>230g self-raising flour<\/li><li>1tsp baking powder<\/li><li>1\u00bd tsp ground cinnamon<\/li><li>\u00bd tsp mixed spice<\/li><li>\u00bd tsp ground ginger<\/li><li>230g light brown muscovado sugar<\/li><li>The zest of 1 orange<\/li><li>100g pecans, halved<\/li><li>260g carrots, peeled and coarsely grated<\/li><li>3 medium free-range eggs, beaten<\/li><\/ul>\n\n\n\n<p><strong>For the icing:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>50g butter, softened<\/li><li>200g full-fat cream cheese \u2013 half fat\/fat free won\u2019t set properly<\/li><li>100g icing sugar, plus extra to dust<\/li><li>The zest of 1 orange<\/li><\/ul>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">METHOD<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 180\u00b0C and grease an 18cm loose-bottomed round cake tin and line the base with baking paper.&nbsp;<\/li><li>Sift the flour, baking powder and spices into a large bowl.&nbsp;<\/li><li>Add the sugar, zest, pecan halves and grated carrots, then stir until well combined.<\/li><li>Stir in the beaten eggs and oil, then mix well.<\/li><li>Pour into the prepared cake tin and bake in the oven for 1 hour or until a skewer comes out clean.&nbsp;<\/li><li>Transfer to a cooling rack and leave to cool completely before icing.<\/li><li>For the icing, beat the butter in a large bowl with a hand mixer until soft.&nbsp;<\/li><li>Add the cream cheese and beat again until well mixed.&nbsp;<\/li><li>Sift over the icing sugar and add the orange zest, then beat until smooth.&nbsp;<\/li><li>Store, covered, in the fridge until needed.<\/li><\/ol>\n\n\n\n<p>Decorate your carrot cake how you wish, with candy carrots, and festive treats.
