And over in Birmingham, <a href=\"https:\/\/www.instagram.com\/p\/COIG2wojEk8\/?utm_source=ig_embed&amp;ig_rid=ef56d13d-0a42-46fc-a507-f63455384d91\">Meat Meets Bun<\/a> is offering an aged beef patty topped with sweet and sticky pork belly, pickled daikon and carrot, and fresh coriander, mint, chilli and nduja mayo.&nbsp;<\/p>\n\n\n\n<p>While we\u2019re on the subject of fully loaded burgers, let\u2019s take a look at <strong>Deli Style, <\/strong>a trend which takes its inspiration from deep-fill sandwiches. Cured meats, ham, pastrami, mortadella (and maybe some gherkins for good measure), are the types of meats you\u2019d expect to find in \u2018deli style\u2019 sandwiches. Naturally, <a href=\"https:\/\/www.tripadvisor.com\/ShowUserReviews-g1202899-d11884889-r481670113-Brick_Lane_Pub-Scafati_Province_of_Salerno_Campania.html\">Brick Lane Pub <\/a>in Italy has it nailed with their pork burger with peach jam, summer salad, Taburno Anglianico sauce, pecorino and wild boar mortadella, as does the <a href=\"https:\/\/www.instagram.com\/thehumbleburgerco\/?hl=en\">Humble Burger<\/a> in Seattle, with peppered pastrami, gherkins and mustard mayo on a scotch beef patty.&nbsp;<\/p>\n\n\n\n<p>From Deli Style to<strong> Dinner Time. <\/strong>These burgers have no rules, as long as it can be wedged between a bun, it\u2019s called a \u2018burger\u2019. Chefs are filling them with everything from meatballs and spaghetti to a vegan roast dinner, tomahawk steak with a fried egg and all the trimmings, and even roast pork with red cabbage, pickled red onions, truffle mayo and gravy &#8211; check out <a href=\"https:\/\/www.instagram.com\/sebastian_eats\/?hl=en\">Sebastian_eats<\/a> on Instagram for inspiration.&nbsp;<\/p>\n\n\n\n<div style=\"height:19px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Get saucy!<\/h2>\n\n\n\n<div style=\"height:19px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Let\u2019s be honest, a burger is as much about the meat as it is the sauce. The sauce brings it all together, it compliments and ignites the flavours and textures. There are two types of saucy burger though: a modest splattering on a bun or full on sloppy-joe, gravy-dripping style &#8211; and it\u2019s the gravy-dripping kind we\u2019re interested in.<\/p>\n\n\n\n<p>You may need a few napkins at hand but there is something delicious about gravy on a burger. <a href=\"https:\/\/www.beerandburgerstore.com\/\">Beer and Burger Store<\/a> in London offers a double smashed patty bun with a pale ale onion jam, bacon, blue cheese and \u2018burger gloop\u2019. Meanwhile, one of <a href=\"https:\/\/www.instagram.com\/p\/CMfA12ELcAi\/?hl=en\">Strip Club Street Food, <\/a>in Birminghams, best-sellers is the beef patty swimming in beef dripping gravy.&nbsp;<\/p>\n\n\n\n<p><strong>Need more sauce? <\/strong>How about a gravy pot on the side. Taking inspiration from the French dip sandwich, some restaurants are even serving burgers with a dipping pot of gravy. <a href=\"https:\/\/www.nannybills.co.uk\/\">Nanny Bills <\/a>in Dalston has one called \u2018The Dalson Dip,\u2019 and <a href=\"https:\/\/www.bluecollarmiami.com\/\">Blue Collar<\/a> in Miami serves their braised brisket burger with a side of Dijon and dripping jus.<\/p>\n\n\n\n<p><strong>Still not enough sauce? <\/strong>Put a hole in the top bun and pour it in. This technique contains the liquid a little more (until you take a bite). It looks more like a bagel than a burger, but the \u2018self-pour\u2019 fun of it is gaining quite the attraction. Look at <a href=\"https:\/\/www.sbe.com\/restaurants\/bibo\/shoreditch?gclid=CjwKCAiAnZCdBhBmEiwA8nDQxaxvl7cyZ5kTofNFp3nqoJmadxIktuK-I2V4mc1a50YGctZJsB8pDxoCMykQAvD_BwE\">Bibo <\/a>in London\u2019s fried chicken brioche with ras el hanout mayo on top or <a href=\"https:\/\/barluca.com.au\/\">Bar Luca<\/a> in Sydney, for its gravy &#8216;sinkhole\u2019.&nbsp;<\/p>\n\n\n\n<div style=\"height:22px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Cheese, cheese, and more cheese<\/h2>\n\n\n\n<div style=\"height:21px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>The cheese pull still has its seductive charm and thanks to it being so \u2018instagrammable\u2019, fondue-like melting cheese that oozes down the sides of the burger will forever have people\u2019s mouths watering. <a href=\"https:\/\/www.instagram.com\/momag_burgers_gin\/?hl=en\">Momag Burgers &amp; Gin<\/a>, in Malaga, serves their burger with a cast-iron melted cheese dip, while others like <a href=\"https:\/\/www.dirtyburger.nz\/\">Dirty Burger<\/a> in New Zealand, drench their burgers in a smoked cheddar and gochugaru dip.<\/p>\n\n\n\n<p>For something a little more modest, how about \u2018<strong>posh cheese<\/strong>\u2019 &#8211; we\u2019re talking Italian burrata, blue cheese, comt\u00e9 and raclette. <a href=\"https:\/\/www.frenchiecoventgarden.com\/\">Frenchie<\/a> in London drizzled raclette and truffle-infused honey on their burgers.&nbsp;<\/p>\n\n\n\n<p><strong>Cream cheese <\/strong>still holds a space in the market &#8211; it\u2019s not just for smoked salmon bagels. It\u2019s the perfect creamy blank canvas for offsetting other flavours like chilli. <a href=\"https:\/\/www.mannalondon.co.uk\/\">Manna<\/a> in London serves their jalape\u00f1o popper vegan fried chicken with hot honey and cream cheese, and <a href=\"https:\/\/www.facebook.com\/Wythmails\/\">Wythies<\/a>, a beef patty with thyme mushrooms, parmesan mayo, rocket and truffle cream cheese &#8211; yum!<\/p>\n\n\n\n<p>From oozing cheese to grilled cheese &#8211; the crispy edge of a toasty really is the best bit.
